Afghan Channa

What is Afghan Channa? Slow-Cooked Chickpeas, Afghan Style

Channa (چنه, also chhana or chana) is the Afghan and South Asian word for chickpeas - specifically, the small, dark, assertively-flavoured variety called kala chana (black chickpea) that is common in Afghan cooking, distinct from the larger white chickpea (kabuli chana) used in hummus. In Afghan cuisine, channa is most commonly prepared as a slow-cooked dish: chickpeas simmered with tomatoes, onions, and Afghan spices until the legumes are fully tender and have absorbed the flavour of the sauce around them. It is a deeply satisfying, protein-rich dish that has been a staple of Afghan home cooking for centuries.

Afghan channa occupies an important place in the cuisine because it is both a weekday home staple - affordable, nourishing, made from shelf-stable dried or canned legumes - and a dish with genuine complexity when prepared with care. The flavour development comes from the same principle as a qorma: properly caramelised onions building a base, spices bloomed in the fat, tomatoes added for acidity, and then the long simmer that allows everything to harmonise. What separates good channa from great channa is time and patient cooking - the sauce should be thick, the chickpeas should have absorbed rather than floated above the sauce, and the whole preparation should taste like something more than the sum of its parts.

Frequently Asked Questions

Is Afghan Channa vegetarian?

Yes. Our Channa Dinner is fully vegetarian - slow-cooked chickpeas in spiced tomato sauce. It is also naturally gluten-free and halal.

How much does Channa cost at Naan Kabob?

Channa Dinner is $15.99. Channa with Bolanee (a pairing that makes a complete vegetarian meal) is $8.99.

Is channa the same as dal?

No - dal refers to split or dehulled legumes cooked into a thinner, soupier texture; channa is whole chickpeas cooked in a thicker, drier sauce. The cooking methods and final textures are different. Both are excellent; both have deep roots in the Afghan and South Asian culinary tradition. Naan Kabob serves channa; dal is a separate preparation.
