Turshi

What is Turshi?

Turshi (ترشی) is the Central Asian and Afghan word for pickled vegetables - a broad category of vinegar or brine-preserved vegetables that appear as a condiment, side dish, and palate cleanser across the Afghan, Persian, Turkish, and Azerbaijani table. Common turshi includes pickled cauliflower, turnips (which turn bright pink from contact with beetroot in the brine), cucumbers, carrots, green chillies, and garlic - all preserved in spiced vinegar and served cold alongside grilled meats, rice dishes, and flatbreads.

In Afghan cooking, turshi serves the same role that kimchi serves in Korean food or pickles serve in Jewish deli culture: the acidity cuts through the richness of slow-cooked meats and fatty rice dishes, the cold temperature provides contrast, and the sharp flavour wakes up the palate between bites. A plate of grilled kabob without something acidic alongside it - turshi, yogurt, or salad - feels incomplete in the Afghan food tradition.

Frequently Asked Questions

What vegetables are used in turshi?

The most common turshi vegetables in Afghan cooking are cauliflower, turnips, cucumbers, carrots, celery, and green chillies. The mix varies by region and household. Turnip turshi is famous for its vivid pink colour, which comes from the small amount of beetroot added to the brine.

Is turshi spicy?

It can be, depending on whether green chillies are included. Most turshi is tangy and slightly aromatic from spices like cumin and dill rather than hot. It is primarily a sour condiment rather than a spicy one.

Is turshi available at Naan Kabob?

Naan Kabob serves its kabob and rice dishes with fresh salad and yogurt sauce as the primary condiments. Ask your server about seasonal condiment offerings - Afghan-style pickled vegetables sometimes appear as sides or on the condiment station at various locations.
