Afghan Cheese

What is Afghan Cheese?

Afghan cheese - paneer or kurut, depending on the type - is not one thing but a family of fresh and dried dairy products that have fed Afghan households for centuries. The most common is fresh white cheese similar to South Asian paneer: soft, mild, slightly salty, and made from whole milk curdled with lemon juice or vinegar. It is eaten at breakfast with naan and honey, crumbled into salads, or served as part of a mezze spread.

The second major Afghan cheese tradition is kurut - dried, fermented whey balls that are reconstituted in water to make a sharp, sour sauce used in noodle dishes, soups, and stews. Kurut has an intense flavour, comparable to strong blue cheese or aged parmesan, and is one of the most distinctive and divisive flavour elements in Afghan cooking. It is a preservation technique as much as a flavour choice, born from the need to store dairy nutrition through harsh Central Asian winters.

Frequently Asked Questions

Is Afghan cheese similar to paneer?

Yes, Afghan fresh white cheese is very close to South Asian paneer - both are fresh, unsalted or lightly salted acid-set cheeses made from whole milk. The Afghan version tends to be slightly more crumbly and milder in flavour than commercial paneer.

What is kurut?

Kurut are dried, fermented whey balls - a preserved dairy product made by straining yogurt until very dry, rolling it into balls, and then drying them in the sun. They last for months or years without refrigeration. Reconstituted in water, kurut makes a sharp, tangy sauce used in Afghan soups and noodle dishes.

Does Naan Kabob use Afghan cheese in any dishes?

Naan Kabob's dishes use garlic yogurt sauce - a smooth, tangy yogurt condiment - rather than kurut. The yogurt drizzle on mantu and aushak reflects the Afghan dairy tradition in its most accessible, restaurant-friendly form.
