Smoking Cooking
What is Smoking in Cooking?
Smoking is the process of cooking or flavouring food by exposing it to smoke from burning or smouldering wood, charcoal, or other plant matter. The smoke contains hundreds of compounds - including phenols, aldehydes, and organic acids - that coat the surface of the food and penetrate the outer layers, contributing the complex, slightly resinous, woody flavour we associate with smoked food. In cooking terms, smoking can be a primary cooking method (hot smoking) or a flavouring technique applied after cooking (cold smoking).
In Afghan kabob culture, smoke is an incidental but essential flavour element of traditional charcoal-grill cooking. When fat drips from cooking meat onto hot coals, it ignites briefly and sends smoke billowing back up around the meat - a process called drip smoking that occurs naturally during traditional mangal (charcoal grill) cooking. This is what gives traditional kabob its characteristic depth and why kabob cooked over gas never quite tastes the same as kabob cooked over charcoal.
Frequently Asked Questions
Is Afghan kabob traditionally smoked?
Not deliberately smoked in the Western BBQ sense, but traditional charcoal-grilled Afghan kabob acquires natural smoke flavour from fat dripping onto hot coals during grilling. This drip smoke is part of what defines authentic kabob flavour and is difficult to replicate on gas grills.
What wood is traditionally used for Afghan kabob grilling?
Traditional Afghan kabob is grilled over hardwood charcoal - most commonly made from fruit woods or hardwoods available in the region. The type of charcoal affects the smoke flavour; fruitwood charcoal produces a slightly sweeter smoke than pure hardwood.
Does Naan Kabob use charcoal grilling?
Naan Kabob uses professional commercial grills designed for high-heat kabob cooking. The cooking method produces the char and flavour characteristic of Afghan kabob. Ask your server about the current grill setup at your location.
