Turmeric

What is Turmeric?

Turmeric (Curcuma longa) is a flowering plant of the ginger family, native to South and Southeast Asia, whose underground rhizomes are dried and ground into the vivid yellow-orange powder that colours and flavours dishes across South Asian, Afghan, Middle Eastern, and Southeast Asian cooking. The colour is dramatic - a small amount turns a whole pot of rice or sauce a rich golden yellow - and the flavour is earthy, slightly bitter, and mildly peppery with a faint mustard-like background note.

In Afghan cooking, turmeric is a background spice rather than a starring flavour: it contributes colour and earthiness to qorma sauces, rice dishes, and marinades without dominating the flavour profile. The yellow tint in various Afghan rice dishes and stews comes primarily from turmeric. At Naan Kabob, turmeric is part of the house spice blend and appears in the cooking of the slow-cooked dishes that define the home-style menu.

Frequently Asked Questions

Does turmeric stain?

Yes - dramatically. Curcumin, the compound responsible for turmeric's colour, is highly pigmented and will stain clothing, cutting boards, silicone utensils, and light-coloured surfaces. When cooking with turmeric, use dark-coloured equipment and wash stained items immediately in cold water.

Is turmeric the same as saffron?

No. Both colour food yellow-orange, but they are completely different plants with different flavours. Saffron is intensely aromatic, floral, and expensive; turmeric is earthier, slightly bitter, and very affordable. In Afghan cooking, turmeric provides background colour and earthiness; saffron is used more sparingly as a finishing aroma in Persian-influenced dishes.

Does Naan Kabob's food contain turmeric?

Yes. Turmeric is part of the Afghan spice tradition and appears in the house spice blend used across Naan Kabob's slow-cooked and grilled dishes. It contributes the warm golden colour visible in the qorma sauce and various rice preparations.
