Marination

What is Marination?

Marination is the process of soaking meat, fish, or vegetables in a seasoned liquid - called a marinade - before cooking. The marinade serves two purposes simultaneously: flavour penetration (spice compounds, salt, and aromatics move into the surface layers of the meat as it soaks) and texture modification (acids like yogurt, lemon juice, or vinegar begin to denature surface proteins, partially tenderising tough cuts before they hit the grill).

In Afghan kabob cooking, marination is the step that separates extraordinary kabob from ordinary grilled meat. The classic Afghan marinade is yogurt-based - full-fat yogurt mixed with garlic, cumin, coriander, black pepper, salt, and whatever house spice blend the cook uses. The yogurt provides acidity for tenderising, fat for moisture retention during grilling, and a coating that caramelises beautifully on the grill surface. Marination time varies: chicken benefits from 4–12 hours; lamb can go overnight; ground meat for seekh kabob is typically marinated for a shorter time to avoid texture changes.

Frequently Asked Questions

Why do Afghan kabob marinades use yogurt?

Yogurt is ideal for kabob marinades for three reasons: it is mildly acidic (which tenderises the meat surface without making it mushy the way lemon juice can), it is high in fat (which keeps the meat moist during high-heat grilling), and its natural sugars caramelise on the grill surface, creating the golden-brown exterior that gives kabob its character.

How long should kabob be marinated?

Chicken pieces typically benefit from 4–12 hours in a yogurt marinade. Lamb can go overnight (8–16 hours) for deeper flavour penetration. Ground meat for seekh kabob is typically marinated for a shorter period - 1–2 hours - as over-marinating changes the texture of ground meat more dramatically than whole cuts.

Does Naan Kabob marinate its kabob before cooking?

Yes. All of Naan Kabob's kabob meats are marinated in the house spice blend before grilling. The marination is part of what distinguishes the flavour and texture of Naan Kabob's grill menu from simpler preparations.
