Seekh Kabob

What is Seekh Kabob?

Seekh kabob (سیخ کباب) is ground meat - beef, lamb, or chicken - mixed with onion, fresh herbs, and spices, pressed firmly onto long flat metal skewers and grilled over high heat until the outside is charred and the inside is juicy. The word seekh means "skewer" in Urdu and Dari, and the technique of packing seasoned ground meat onto a metal rod before grilling is one of the oldest and most widely shared in the Central Asian and South Asian culinary world.

The key to a good seekh kabob is the fat content of the meat and the binding - the mixture has to be firm enough to stay on the skewer through the grilling process without falling off, while still producing a juicy, slightly springy result inside.Seekh kabob is a classic of the South Asian and Afghan grill tradition.
