Bolanee

What is Bolanee? Afghan Stuffed Flatbread

Bolanee (بولانی) is a pan-fried Afghan stuffed flatbread - thin, unleavened dough folded over a filling of spiced potato and leek (or sometimes lentils or pumpkin), then cooked in a pan until golden and crisp on both sides. It is one of the most beloved street foods in Afghanistan, sold from market stalls in Kabul and served as a quick, affordable, filling meal throughout the day. Bolanee is also a staple of Afghan home entertaining - made in large batches for gatherings, cut into triangles, and served with house yogurt for dipping.

The texture of great bolanee is what elevates it from simple flatbread: the outer dough blisters and crisps to a light, golden shell while the filling stays moist and well-seasoned inside. The combination of the slight char on the outside and the warmth of the potato-leek filling against cool yogurt is a complete flavour experience in two or three bites. In Kabul, bolanee is a mid-morning staple - bought from the market bakery on the way to work, eaten standing up, finished before the tea cools. In Toronto, at Naan Kabob, it is the appetiser we recommend to every first-time guest.
