Pan-Frying
What is Pan-Frying?
Pan-frying is a dry-heat cooking method in which food is cooked in a moderate amount of fat in a wide, shallow pan over medium-to-high heat. Unlike deep frying (where food is fully submerged in oil) and sautéing (which uses very little fat and very high heat), pan-frying uses enough fat to reach partway up the sides of the food, producing a golden, crispy exterior through the Maillard reaction while the interior cooks through in the trapped heat of the pan.
At Naan Kabob, pan-frying is the technique used for the Eggplant Borani - sliced eggplant cooked in oil until golden and soft on both sides before being layered with tomato sauce and plated over garlic yogurt. The pan-frying step is essential: it caramelises the eggplant's natural sugars, drives off excess moisture, and produces the slightly crispy, oily exterior that makes bourani banjan so satisfying. Eggplant that is simply baked or boiled never achieves the same richness.
Frequently Asked Questions
Why does pan-frying make eggplant taste so much better?
Eggplant contains a lot of water and has a spongy texture that needs high heat to transform. Pan-frying drives off the water through evaporation and steam, concentrating the eggplant's flavour; simultaneously, the Maillard reaction caramelises the sugars on the cut surface, producing a golden exterior. Boiled or steamed eggplant never achieves this concentration and depth.
Is pan-frying the same as sautéing?
They are similar but distinct. Sautéing uses very little fat and very high heat with constant movement of the food; it is a rapid cooking method. Pan-frying uses more fat, moderate-to-high heat, and the food is left mostly undisturbed to develop a crust. The eggplant borani technique is pan-frying - the eggplant sits in the oil and develops a crust on each side before being turned.
Which dishes at Naan Kabob are pan-fried?
The Eggplant Borani is the primary pan-fried dish on the Naan Kabob menu - pan-fried eggplant served on garlic yogurt with spiced tomato sauce. This technique is also applied in various other preparations across the menu where a golden exterior is required.
